Sora - Vietnamese Vegan Cuisine(Berlin)

There are a lot of Vietnamese restaurants in Berlin. And when I say a lot, I mean A LOT. If you are craving for that steamy Pho on a cold Berliner night, you wouldn't need to look more than 5-10 min to find a place that will happily serve you one.
Why is that?
In the 1980s, Vietnamese came to East Berlin as temporary contract workers, as part of a deal between the East German government and the Communist government of Vietnam. South Vietnamese who fled the Vietnam War instead came to West Berlin.
Many Vietnamese remained in Berlin even though they lost their legal residence statuses and jobs after the fall of the Berlin Wall in 1989. The residence permits of other Vietnamese only permitted them to live in East Germany, even after reunification. Vietnamese who lived in other parts of former East Germany, such as Chemnitz, Leipzig, and Rostock, moved to Berlin after the fall of the Berlin Wall.
So, In the 1990s many Vietnamese who lived in a unified Berlin began establishing small businesses, like nail salons, Spätkauf(convenience stores in Berlin that operate at late nighttime), flower shops and of course brought their incredible spices, herbs and experience and opened restaurants all over the city.
Now, to Sora,
Sora is relatively new(this article is from November 2018, and Sora has opened on November 2017), so as a big fan of the South-East Asian kitchen and during my travels in Asia(India, Thailand, Laos, Cambodia and Vietnam)I had the chance to eat a lot of this cuisine to determine that I absolutely love it.
Here comes the trouble, as a vegan I was disappointed a countless number of times in Vietnamese restaurants. Due to the simple fact that the Pho(the traditional Vietnamese soup), for example, is being prepared by default with a chicken broth/stock that gives it, it's rich and distinctive flavouring. So neither I pass the Pho, which is profoundly disappointing, or I request for a vegan version that translates into an improvised dish who lacks the main flavouring sources, and that is precisely how the food feels when you eat it.
At Sora the dishes are vegan by default, being prepared with the right set of skills and ingredients for the flavours and texture to kick-in accurately.
The food is full of fresh vegetables, and for those of you(including myself)who admires mushrooms, Sora offers a variety of mushroom-full dishes(shiitake! a lot of shiitake!).
For me, mushrooms are so good, that making a dish with three different kinds of fungus is like cheating, acceptable cheating.
In conclusion, Sora is doing an excellent job proving that South-East Asian food can be vegan, tasty and beautiful(check photos) when implementing the right set of ingredients combined with the ability to replace main components such as chicken broth with the right vegan alternative.
